"If we chase perfection, we can catch excellence"

The students have been real busy with final tests, presentations, and mastering the baking portion, so I'll take over the blog this week.

In the classroom, we've got two more tests down! Supervision went well but we struggled with the Nutrition test. For the title this week, I found a quote from Vince Lombardi: "Perfection is not attainable, but if we chase perfection we can catch excellence". I think it's very fitting for this super motivated group. It's difficult to not pass a test but they're keeping their heads up and moving forward! They need to study this weekend for the ServSafe test Monday!! The practice tests went well so it's looking pretty good!

Santrie is learning how exhausting baking can be!

They are still killing it in the kitchen! You know you have a fantastic group when they can call out the staff for slacking- leaving flour in the bowl? No no, you need to mix that more! Tuesday they were introduced to the mess that is brownies, and on Thursday they made some amazing Cheddar Bacon scones!

Monday is also the start for the second youth cohort! Zack is pretty excited and understandably a little nervous- second round teaching and he's going to be doing double duty! If the success of this group is telling of the future, he's going to be just fine!

Next week will be a big one for students. We have ServSafe test Monday, as well as guest speakers from Short Stack Eatery coming in to talk about the process of opening a restaurant. (We get a lot of future entrepreneurs in the program, so I want to continue having community folks who started their own restaurant or food truck to come in and talk to the students and answer questions, so if this is something that you would be interested in doing, please email me at jaclyn@emum.org)

They also have their big Nutrition presentations on Wednesday, and have their final Cost test on Friday. Luckily tutor Jan is willing to come in twice next week to work with them on review for Cost, plus we will be doing a decent amount of review in class!

Our next group will be starting July 8th. It's not too late to fill out an application! If you are interested in learning more email me (jaclyn@emum.org) or call us at 608-598-0420.
